Temperatures have been past the hundred degree mark, so lunch must need be fresh and cool: fish tacos with mango salsa and a champagne glassful (or two) of Elderflower Press√©.

MM said Elderflower tastes like champagne without the alcohol.
I think it tastes like flowers and fruit and summer with a little burst of bubbles.

tilapia oven baked with olive oil, salt and pepper until done.
wrapped in a flour tortilla with lettuce and mango salsa.

Mango Salsa:
1 mango, chopped
3 green onions chopped fine
a small handful of cilantro
olive oil
lime juice
salt, pepper

Combine all ingredients. Squeeze out the juice of the mango from its stone
after you chop it. Drizzle lime juice and olive oil to taste. Salt and pepper to taste.
